Why not apply the 10 degree leeway in addition to heading so you track down your "track" line rather than just allowing it to play out? Be proactive and make the boat go where you want with all things considered?

You're forgetting about how the boat can only do 45 degrees into the true wind (30 deg to apparent). South is the best angle to the wind. This is part of passage planning, you must take the wind direction into account so that your headings are at optimum wind angles. Tracking down your track in this case is not possible. It is too close to the wind.
